Peanut butter banana yogurt treats

I know I’ve been awol, but it’s with good reason, things are a changing up in these parts (cowboy impression) in fact, plan: becoming a WAHM is in full swing  – but more about that when all my ducks are in a more stable row.

Meanwhile my peanut butter loving bestie came up with another fun recipe idea for us…

Yummy yummy grab them straight out of the freezer!

Frozen yogurt topped anything is a win in my book
You need bananas, peanut butter and yogurt – For those of us with sugar related issues just substitute with insulin friendly brands
Cut the banana – Cut mine like this and freeze to add to smoothies 2 (just saying)
put peanut butter on half – any nut butter would work (Nutella counts right?) or skip this step
Make mini banana nut sarmies
Spoon yogurt over and freeze . . .  YUM!!!

Frozen yogurt grape pops

Robyn has done another yummy low cal recipe for us and it is super easy to do
What you need:
Grapes
Toothpicks
Plain yogurt
Honey
How to do:
Put grapes on toothpicks
Dip grapes into yogurt
Freeze grapes
Drizzle with honey for added sweetness
(For my no sugar needs I’d use a flavoured yogurt that doesn’t require drizzling with honey)
The adorable helper (Robyn’s daughter Riley) is an added extra πŸ™‚

Canderel chocolate bunnies, work for birthdays too

We all know by now that I’m not supposed to be having sugar πŸ™ but I loooove chocolate…
Canderel was kind enough to give me a hamper of treats so I don’t have to sit out this Easter… and you know what! the chocolate is ACTUALLY quite nice, seriously I prefer it to sugary brands, I kid you not, the chocolate has a great texture and they even have different flavours…Rob says it’s cause my body knows I’m not allowed others, but I beg too differ and I caught him eating like half a slab… whose body knows what now buddy?

They shared this great recipe for Easter lollies and I thought, hey why not make for my birthday, soooo I did… NOM NOM NOM

HAPPY BIRTHDAY TO ME
Dark chocolate bow see, I got all creative
Here is their recipe (I made 3 bunnies with a slab and a half of choc though)

Serves: Makes 4 large lollies

Ingredients:

  • 3 x 85g Canderel milk chocolate slabs
  • Clear plastic chocolate egg mould (or any other shape you fancy) with 4 compartments and spaces for sticks
  • 4 plastic or wooden lollipop sticks
  • Glitter for dusting (optional)

Method:

  1. Make sure the mould is clean and dry before starting. Bring two cups of water to the boil in a large pot. Place a smaller pot or bowl over the larger one. Break the Canderel milk chocolate into pieces and place in the small bowl. Turn the heat down to a simmer and gently melt the chocolate, stirring occasionally with a wooden spoon.
  2. Place the moulds on a hard, flat surface and pour in the melted chocolate. Gently tap the mould on the hard surface to get rid of any air bubbles.
  3. Insert the stick at an angle about 3cm into the chocolate, ensuring that it’s well covered. Press the stick down flat in the stick channel, then place the mould in the fridge to set. When set, the chocolate will start coming away from the mould and no longer look wet.
  4. Once completely set, remove the chocolates from the moulds. Sprinkle over some glitter and store in an airtight container in a cool dark place (not the fridge).

Cauliflower “rice”

So I’m still  on my get healthy avoid carbs and sugar due to insulin resistance trip….
I’ve heard about this cauli-rice thing and was intrigued as I love cauliflower and am avoiding rice…
There are tons of recipes on the net but this is my take on it, using frozen cauliflower because I’m just bad like that, hehe

My cauliflower rice paired soooo well with Rob’s pilchard stew, yum yum
I used frozen cauliflower, veggie purists ,  I beg your pardon, hehe
Poured boiling water over it to defrost
Stuck it in blender, and blended
This is consistency you are looking for
Stick in pan with dash of  oil and spice of your choice – I used garlic butter and mixed herbs
then pan fry and enjoy πŸ™‚

I really like it hey, okay so it doesn’t taste like rice but it’s great texture-wise and makes a nice substitute

Foodie Friday…cocoa peanut butter popcorn

So I have two Rob’s in my life Robin my husband and Robyn my maid of honour…. so I’m better than batman (they don’t think I’m funny either) You have heard a lot about them over the years.
Robyn (girl Robyn – how my little cousin refers to her) is on yet another health kick (she never isn’t on one – probably why she can wear anything…) We both struggle with the sweet tooth situation πŸ™ so she is with me on the search for sweets that don’t make you gain weight. She has agreed to share some of her healthy snacks on the blog so yeah!!! here is the first πŸ™‚

cocoa peanut butter popcorn
(for mine I substitute the peanut butter with the sugar free variety)

Robyn insists that it’s not soggy but it’s delicious
You need: popcorn, tablespoon peanut butter and teaspoon cocoa
Air pop about three cups of popcorn
melt the peanut butter….
mix peanut butter with popcorn and sprinkle cocoa πŸ™‚

I did the calculations using my friend MYFITNESSPAL and it’s low cal and low sugar, yeah us!!

My weekend and an almost instant smoothie recipe

Aidan LOVES stickers “stickies” I noticed he got a thrill from taking stickers off clothes and putting it on things
I bought him a sticker book and it’s been quite the hit πŸ™‚
LOVE these by woolies, where were they when I was pregnant or breastfeeding
I can’t decide which one is my favourite….
This is how I saw Aidan most this weekend…uppy mama uppy ….think he realized work was about to get full time again
Went bowling with the in laws of Friday-here Robin’s brother Allan shows his daughter how to bowl
Allan happens to be Aidan’s Godfather
I love this pic πŸ™‚
Aidan’s aunts, on the right it’s Allan’s wife Kim and on the left Robin’s sister Mandy
Me and Kamryn πŸ™‚
Just chilling with a blow up pool, because we can πŸ™‚
Seeing these two together is good for my heart
A little smoothie tip:
Freeze a banana and a handful of other fruit of your choice together in a container
When you want a smoothie just blend it with a glass of milk (the frozen banana makes sure it’s nice and thick)
I add a little fun sized yogurt (when I use soya milk) and am able to change the flavor by changing the yogurt
EASY PEASY
I do this every time I go grocery shopping (whatever fruit is on sale) and can whip up a smoothie or two with minimal effort πŸ™‚
