I use this meat free mince meat recipe for a multitude of meals. Buddha bowls , Burrito bowls, tacos, pasta, filling vet koek. It’s Rob’s recipe although he doesn’t eat meat alternatives himself.
What you use
- Onion
- Yellow pepper
- Pinch garlic
- tsp coriander
- tbsp cumin
- Unflavored soya mince
- Soya sauce
- Vegetable stock
- Black Beans
What you do
*Prepare a cup and a half of soya mince by soaking it in a mixture of soy sauce and spices. Just coat the soya mince with sauce and leave to absorb.
Dice up half a small onion, a quarter of a yellow pepper and add it to warm oil in a pan with a pinch of garlic, a teaspoon coriander and table spoon cumin
Fry till golden brown
Add the *prepared mince, mix together and add a cup and a half of water and a block of vegetables stock.
Cook until mince is cooked through
Add a tin on black beans.
Serve
