A week of Consol glass inspired lunches

So a while back Consol asked if I would like to be part of an experiment, they send me glass jars and things and I see what I can come up with.

I had to read the email a couple of times because HECK YES! I want to make things with Consol glass. I make things with glass all the time like sewing kits or bath salt. 

So what did I do? I decided to make a weeks worth of things to pack in my lunch box…

 

Here are the super simple recipes:

Hummus Dressing for a Layered Salad

On Monday I went for a  layered salad with shredded chicken, corn, rocket, feta and a soft boiled egg.

The little handy container that goes with my salad jar is was filled with a “homemade” hummus dressing

Dressing:

Mix a heaped tablespoon of hummus  with two spoons of white vinegar, some dried sage and lemon, salt and pepper to taste. Mix up and enjoy

Apple Pie Overnight Oats

On Tuesday I did a breakfast in a jar.

Oats:

I mixed 2 heaped table spoons of oats and one of chia seeds in a 300ml jar. I then mixed in half a jar of milk (milk substitute)  and left it overnight… In the morning, I chopped  in an apple and covered with loads of cinnamon –  It is sooo good

PB&J Smoothie

All gold had sent me some amazing jam ( including the lite version with less sugar) which I put on my three ingredient scones. 

I also put it in this yummy smoothie

Smoothie:

I added a  heaped tablespoon of chia seeds to half a bottle of milk(milk substitute) and left it over night, in the morning I  blended  it up with a frozen banana a heaped teaspoon of @allgoldsa jam and a heaped teaspoon of @eatnakednudefood peanut butter

Such a inexpensive, filling and super yummy recipe

 

Home made soup croutons

If you have left over soup from supper (or from woolies). The @consolglass salad jar is an ideal way to keep your croutons from getting soggy in transit.

How to:

I made the croutons  by spreading a thin layer of garlic oil (just have a garlic clove in some olive oil) on bread that had become “less than fresh”, I then cut it up and toasted the little blocks in the oven

 

Sugar free chai latte gummies

On Friday I wanted a treat and since sugar free sweets are not agreeing with my tummy at the moment I decided to make my own…

Gummies:

I made the chai ghosts  with half a cup of Nespresso rooibos chai and 30g of gelatine. All you do is add the gelatine to the warm chai and mix it up well, then pour in to containers and leave to set. These came out so good I even made literal wine gums with the same ratio 🙂
