If you are in the market for an easy apple pie recipe. This is it! It’s basically made from a roll of puff pastry and bits and pieces.

I’ve been playing around with recipes a lot lately, sometimes I win sometimes I lose, this is a win.
What you need
- 2 big apples
- 1 roll of pastry
- 2 tablespoons brown sugar
- 1 tablespoon butter
- cinnamon (I added an additional shake of nutmeg and ginger, because I’m extra)
- icing sugar
- lemon/lemon juice
What you do
- peel and chop apples
- add apples, butter, sugar, spices to a microwave safe bowl
- microwave on high for a minute, stir and microwave again for another minute
- unwrap and half pastry
- sandwich apple filling between two pieces of pastry and crimp edges
- egg wash
- bake until brown
- take 1/3 cup icing sugar
- add enough lemon juice to make a glaze
- litterally ending off with easy peasy lemon squeesy
